To mark the launch of Organic. Feed Your Happy Christmas and the Soil Association's Organic Christmas Marketplace, mixologist Giles Looker from Soul Shakers has partnered with Vintage Roots to create a series of festive organic cocktails.
This Organic Full Stocking Fizz/75 is a perfect winter party drink. The recipe is for one but it works so perfectly well served from a pitcher and topped up with the sparkling wine across lots of glasses. The mixture can be made a couple of hours in advance and kept in the fridge until guests arrive.
Ingredients (to be organic where possible)
25ml Organic Juniper Green gin
40ml clementine juice
10ml cranberry and port jam syrup
5ml lemon juice
60ml English sparkling wine
Take half a jar of organic Duchy Originals cranberry and port sauce and add 100ml of hot water and 10g of caster sugar. Stir well and strain through a sieve, and extract as much liquid as possible. Allow to cool. (It is possible to substitute plain cranberry sauce, just add a 15ml of ruby port.)
Chill coupette cocktail glasses or champagne flutes, ideally in the freezer.
Mix the gin, freshly squeezed clementine and lemon juices with the syrup and stir over ice.
Strain into a chilled coupette or champagne flute. It should come up just above half full.
Top with a dry organic English sparkling wine. A bottle should make 10 to 12 drinks – depending on the generosity of your wrist.
