To mark the launch of Organic. Feed Your Happy Christmas and the Soil Association's Organic Christmas Marketplace, mixologist Giles Looker from Soul Shakers has partnered with Vintage Roots to create a series of festive organic cocktails.
This Organic Mulled Superfruit Mojito contains mulled rum – make this yourself a couple of days before your Christmas party.
Ingredients (to be organic where possible)
For the mulled rum
A bottle of Organic Papagayo golden rum
250g mixed dried fruit and peel
25g frozen acai berries
A minimum of 48 hours before the event, take 250g of mixed dried fruit and peel and 25g of frozen acai berries and place in a sealable jar. Add the bottle of golden rum and allow to infuse for 24 to 36 hours.
Strain off the liquid and bottle. Keep the rehydrated boozy fruits for use later (they are an amazing addition to bread and butter pudding!).
For the cocktail
40ml mulled rum (see above)
10g mulled rum fruits
25ml lime juice
10ml goji liqueur
5ml simple syrup (2:1 ratio of sugar to water)
8-10 mint leaves to garnish
Place two teaspoons of the soaked fruits and the mint leaves in a highball glass and gently squish.
Add the mulled rum, lime juice, liqueur and syrup.
Half fill the glass with ice and churn thoroughly to mix, dilute and chill. Add more crushed ice until the glass is full.
Garnish with a sprinkle of the boozy fruits, a couple of mint sprigs and a dusting of icing sugar.
