It's National Vegetarian Week so there's an avalanche of veggie and vegan inspiration around. There might even be too much, so here are some of our favourite vegetarian cookbooks to keep things simple.
Saffron Soul by Mira Manek is a beautiful collection of healthy vegetarian dishes from India, focusing on lentils, vegetables, grains and, of course, spices. The mung bean curry is brill, but there's plenty more, from Gujarati dal to mango shrikland cheesecake.
Vegan recipes! Pop puns! Illustrations of of Morrissey and Nick Cave! Never mind our favourite vegetarian cookbooks; Defensive Eating with Morrissey and Comfort Eating with Nick Cave might just be the best books ever. Released by the always wonderful Microcosm Publishing, based in Portland, OR, the duet launched on Kickstarter last summer.
15 Minute Vegan by Katy Beskow is simply an excellent cookbook: super-quick, super-tasty vegan recipes made using ordinary ingredients. The butternut squash and sage macaroni is drool-worthy, but there are breakfasts, snacks, desserts and mains to meet all tastes.
The Hairy Bikers, AKA Si King and Dave Myers, are the poster boys for this year's National Vegetarian Week and have released their latest diet cookbook today as part of the whole shebang. Don't be put off by the 'dieters' business: it's just 80+ vegetarian recipes that put healthy plant-based foods at the forefront of dinner.
Can fudge be good for you? Nicole Maree suggests it just might be, with her mint-as fudge recipe in The Healthy Convert. The book is full of sweet treats like choc-coco roughies, strawberry blonde bars and jaffa pudding – all vegan, gluten-free and made with natural sweeteners.
