New cookbook looks beyond carrot cake for veggie-centric desserts

A new cookbook his the shelves this week, putting vegetables at the forefront of innovative desserts.

Offering sooo much more than carrot cake, Veggie Desserts and Cakes by Kate Hackworthy celebrates the nutrition, natural sweetness and moisture that vegetables can bring to the table when it comes to puddings.

Somerset-based Kate Hackworthy – columnist for Vegetarian Living magazine and title-holder of Best Blog in the Soil Association's BOOM Awards – also shows how avocados make a dairy-free substitute for butter and vegetable purée can replace eggs in some desserts.
