Recipe: Blueberry and cashew baked oatmeal

This wholesome breakfast from Healthfection is pretty close to perfection. It's just like having pudding for breakfast! Packed with plant protein, healthy fats and a good dose of antioxidants, it's a brilliant way to start your day.


45g oats
big handful of blueberries
A few dried figs
1 ripe banana
60ml almond milk
Handful of cashew nuts
2 teaspoons of cinnamon
1 tablespoon pure maple syrup


Preheat the oven to 180ºC.

Just cover the oats in boiling water and soak for 10 minutes.

Chop the banana into slices.

Roughly chop the cashew nuts and the figs.

Stir in the rest of the ingredients in with the oats once all the water has been absorbed leaving a little of the fruit to put on top.

Put all the ingredients into a baking dish.

Bake for 20 minutes until slightly brown on top.
