Recipe: Cleansing green gazpacho

Healthfection green gazpacho

This soup from Healthfection is high in fibre and contains nothing but goodness. You get a good amount of fat from the avocado which helps us to absorb fat-soluble nutrients from our intestines. Garlic provides our immune systems with a boost, parsley flushes out excess fluid and supports good kidney function (good for bloating) and watercress contains a lot of B vitamins which support a healthy metabolism and steady hormones. I know cold soup is a weird concept but honestly it's good!

Serves 2

Ingredients

1 cup frozen peas
1 garlic clove, crushed
1 tablespoon parsley, chopped
1 large very ripe avocado, roughly chopped
1/2 cucumber, roughly chopped
2 large handfuls watercress
Cold water
4 tablespoons olive oil
Salt and pepper

Method

Put all the ingredients into a blender and add enough water to get a double cream-like consistency. Serve cold and enjoy.
