This recipe from Healthfection is totally delicious. I'd never attempted coconut rice before as I was under the illusion that it had to be bad for you (which it isn't) and that it would be very tricky (which it isn't).
It isn't strong enough to have as a main but it is perfect as a side dish with something like a Thai red lentil curry.
1 cup uncooked brown rice
1 cup coconut milk
1 tsp grated fresh ginger
1 garlic clove, crushed
2 tbsp grated coconut
Pinch of salt
Put the rice, coconut milk, ginger, garlic, a pinch of salt and the grated coconut with 1 1/4 cups of water into a saucepan.
Bring it to the boil then reduce to simmer for 40-45 minutes (until all the liquid evaporates).
Remove it from the heat and keep it covered for 10 minutes.
Serve topped with coriander.
