Wagamama is setting out its stall as as the go-to high street eatery for vegan food – but your involvement is needed to make sure that continues.

The Asian-inspired chain has launched noodle lab, a development kitchen that's open to the public and trials new dishes on a four-week rota. If they're a hit at the Soho site they get added to the Wagamama menu across the country.

At the moment noodle lab is serving a vegan-friendly katsu curry (AKA 'vegatsu') made with 'wheat meat' seitan coated in panko breadcrumbs, hirata buns stuffed with panko aubergine and mushrooms, vegetable tempura, and a selection of natural vegan drinks from Nix and Kix (watch out for a hit of cayenne pepper).

Wagamama has already added 29 'new and re-imagined' dishes to its vegetarian and vegan menu this month, so long may it continue.
